Note: these first three items are important corner posts to my "Food for Healing" program.

 

Cole Slaw:

This is a simple, easy to make salad that lasts for days. Everyone makes it just a little different. I like red cabbage as well as green because of the extra iron red cabbage offers. I used to put celery in as well but the rabbits turned their noses up; too wet.

Honduran style chimol (or chismol)

 

A condiment usually served with grilled meats, but also goes well with other dishes including beans and rice.  My favorite is to put it on top of coleslaw. Alone, it could be used for a delicious salsa.

 

The raw mix of five colors along with the addition of lemon or lime juice possibly makes this dish a fountain of health. More information on the health benefits of these ingredients follows the recipe.

Sprouts

 

Within the casing of a seed lies all the nourishment and vitality that newly emerging seedling needs to not only to survive but develop into a vibrant life force. Why wouldn’t you want to eat sprouts? They are the third of my corner-post for health.

Caribbean Fish Soup :

Light and Satisfying

 

Please bear with me on this one and keep in mind that I consider recipes ‘guidelines.’ I never follow the rules (oops, gave myself away…I meant directions) and I intuitively throw in whatever I want.

Breakfast Idea

Many that follow me ask, “what do you eat for breakfast?” Fruit is always a favorite and I make green smoothies, but this is one of my favorites.

Pictured is toasted 7 grain bread. I spread toasted Tahini over it then drizzle local raw honey. The final topping is sprouted clover. It’s very mild flavor is a bit like alfalfa but I like its blood cleansing benefits.

I eat this along with fresh fruit. Pictured is fresh papaya and lime.  Nutty and sweet…my favorite flavor combinations.

Healthy (?) Chili

Can good chili ever be truly healthy? I load it with fresh garlic and onions in hopes that my body will forgive me for feeding it food that I have cooked for hours to develop a blending of flavors. Making it healthy is what I do to my dish after I have cooked it to please others.
